This guy was our houseguest! It turns out that besides being a PhD., he also loves to cook and cater. He bought/brought all of his own supplies because "he didn't want to deplete our stash", and we had tons of leftovers to share with friends.
It was surreal having him show up, masterfully plan everything to be timed just right, chop, visit and even figure out our microwave and "interesting" storage system. It was so much fun watching someone have so much fun!

...you can get rid of 75% of the fat in sausage (even chicken sausage), by poking holes in it, boiling it, then grilling it. Still tender on the inside, crispy on the outside.
